For chocolate making, it means more nibs and less waste. A 10" to 14" mill pulley and a 1.5" motor pulley gets a 1725 rpm motor down around 180 to 260 rpm on the mill. 1/4 hp should do it for the homebrewing mills. 1/2 hp works for the 320D and G mills, 3/4 hp for the 328D, and 1 hp for the 328G. Ebay has some good deals on motors.
